With a deep commitment to heritage fruit varieties, healthy soils, and sustainable biodiversity, his work goes far beyond conventional winemaking. Instead, he has pioneered a new approach to alcohol-free drinks—one where classical methods meet thoughtful experimentation, resulting in complex, gastronomic creations that stand apart in the world of fine dining and wine culture.

At the heart of this philosophy lies an extraordinary fruit: the Champagner Bratbirne Pear.

An ancient Swabian wine pear, the Champagner Bratbirne has symbolised quality and elegance for centuries. These pears are harvested from ancient pear trees growing on Jörg Geiger’s own property, some of which have stood for generations, deeply rooted in the Swabian landscape. With their delicate aromatics and remarkable balance of acidity, sweetness, and tannin, the Champagner Bratbirne is widely regarded as the queen of wine pear varieties. Jörg Geiger’s fascination with old fruit varieties began in childhood, but it was the rediscovery of the rich cultural history of the Champagner Bratbirne that inspired him to revive the long-forgotten tradition of pear sparkling wine.

C.-Bratbirne is the result—and it is Jörg Geiger’s first completely de-alcoholised sparkling creation, designed for toasting no matter the occasion. Created as a refined alternative to sparkling wine or Champagne, it shines equally as an elegant aperitif or as a sophisticated companion for festive moments.

The process begins with the production of a classic pear sparkling wine made from freshly pressed Champagner Bratbirne pears. Using the traditional bottle-fermentation method, a still base wine is first created, then bottled for a second fermentation with the addition of yeast. The wine matures for over three years on the lees, developing astounding complexity, texture, depth and delightful brioche notes.

Rather than disgorging, the bottles are emptied under pressure before undergoing a crucial final step: gentle de-alcoholisation through vacuum distillation. This low-temperature process carefully removes the alcohol while preserving as much of the wine’s natural aroma and structure as possible.

To restore and elevate aromatic complexity, C.-Bratbirne is refined with a bespoke recipe developed by Jörg Geiger, incorporating carefully selected herbs, spices, and white blossoms. A precisely balanced dosage of juice from fully ripe pears from the previous year’s harvest completes the profile, adding depth, freshness, and a fine, full-bodied texture.

The result is an expertly crafted, completely alcohol-free pear sparkling wine, finished with delicately integrated carbonation—elegant, expressive, and uncompromising in quality. A true celebration drink, rooted in history, re-imagined for us.
